The last gasps of summer do have it’s benefits, ya’ll. It’s the time of year that fruits and vegetables are readily available at just about every region in the country for a decent price. As you scribble on your grocery list for next week’s shop, don’t forget to add these three:
Tomatoes, eggplant, and sweet peppers. I got these babies from my garden, but if you don’t have one, don’t fret–as we mentioned, they’re still in season, so you should be able to get some at a good price at your local farmer’s market.
So why are these three items so good for your skin? They’re chock full of Vitamin C, fiber, and antioxidants, all of which are amaze balls for your skin. Not to mention their high water and fiber content, which helps keep you feeling full without all the calories.
Tomatoes, ironically feared by Italians to be poisonous, keep best outside of your refrigerator. Putting them in the icebox makes them mealy and mushy. Opt to keep them on your kitchen counter and use them within a few days upon purchasing.
Tomatoes are one of those rare fruits (yes; it’s technically a fruit) that actually get more nutritious after you cook it. Tomatoes also contain lycopene, a powerful antioxidant. Tomatoes are also good for your hair–they contain 24% of your daily value of biotin.
Eggplant offers free radical protection, which means that the nutrients contained seek out and destroy faulty and potentially cancerous cells before they have a chance to take hold. The skin is loaded with fiber, so it helps keep you full and aid with weight loss.
Sweet peppers also contain hefty amounts of skin-loving Vitamin C and antioxidants, and has a high water content and VERY low calorie.
Take all three of these and sauté in some olive oil and Italian herbs. Sprinkle some parmesan cheese and make it a complete meal.
